I’ve been baking cookies since I was a child.

I’ve baked lots and lots of all types of cookies – drop cookies, cut-out cookies, rolled cookies, pressed cookies, fancy cookies and simple cookies.

I’ve baked them on dry baking sheets, buttered baking sheets and oiled baking sheets.

This is the first time I have baked cookies on parchment paper.

How could I have been so, so, so….. ignorant? stuck in a time-warp? foolish? glutton for extra work?.

Baking cookies on parchment paper, for those who have never done it, is so easy and works like a dream.

No more buttering the baking sheet, using a spatula to get the cookies off, washing the baking sheet and doing it all again.

Just slide the paper with the cookies off the baking sheet and repeat.

Maybe I thought the extra work was to stave off the guilt of eating all the cookies….

Foolish woman!

Triple Chocolate Chunk Cookies

Ingredients:

Instructions:

Cream butter, sugar and eggs.

Add chocolate and mix.

Stir in flour, cocoa, cinnamon, baking powder and salt.

Stir in chocolate chunks and walnuts.

Drop by tablespoonful on parchment covered baking sheet..

Bake at 350F (175C) about 11 minutes, until the top just starts to look dry.

Remove and let rest on baking sheet for 5 minutes.

Remove and let cool.

A recipe from my grandmother: Make dough, shape into 2 logs and refrigerate. When you get the urge, slice and bake. The recipe calls for almonds….

I don’t have almond trees, I have walnut trees. I use walnuts.

These are so light they hardly qualify as cookies – which means one can eat a lot of them as they have almost no calories. Trust me….

Peanut Butter Oatmeal Chocolate Chunk

With both peanut butter and oatmeal how can these not be good for us?

Ginger Chocolate Chunk

All of my cookies are ‘chocolate chunk’ rather than ‘chocolate chip’. I can’t get chocolate chips so I buy big bars of chocolate and smash them with my trusty ‘chocolate hammer’. You can see it on the plate of chocolate chunks. Naturally, I have to eat any leftover chocolate.

.The hammer also works well for ‘chopping’ nuts. Put them in a sturdy bag… or have dogs to clean up the bits that hit the floor.

All of these cookies freeze well.

And keeping them in the freezer also makes it just the tiniest bit harder to snack indiscriminately.
