Sure, you can choose a salad or veggie sides at Trou Normand in San Francisco’s South of Market district.
But really, this restaurant is all about the meat.
Local heritage breeds, whole-animal butchery, and up to 40 different kinds of house-made charcuterie and salumi offered daily are its hallmarks.
It is the younger sister restaurant to Bar Agricole, both founded by Thad Vogler. Executive Chef Salvatore Cracco, who heads the kitchen and butchery program, was the former butcher and sous chef at Bar Agricole.

%20is%20one%20of%20the%20prettiest%20cocktails%20around.%20A%20single%20slender%20brick%20of%20ice%20dangles%20inside%20the%20glass.%20Because%20it%20melts%20more%20slowly%20than%20regular,%20smaller%20ice%20cubes,%20your%20drink%20never%20gets%20watered%20down,%20even%20for%20someone%20like%20myself%20who%20usually%20sips%20the%20same%20cocktail%20throughout%20the%20entire%20dinner.%20A%20long%20orange%20peel%20wraps%20around%20the%20inside%20of%20the%20glass.%20The%20cocktail,%20a%20blend%20of%20gin,%20lemon,%20apertivo,%20ginger%20and%20bitters,%20tastes%20like%20a%20liquid%20tangerine%20gum%20drop%20without%20the%20cloying%20sweetness.%20Instead,%20the%20bitters%20really%20heighten%20the%20bitter-sweet%20taste%20of%20citrus%20rind.%3C/p%3E%3Cp%3EThe%20charcuterie%20board%20with%20four%20selections.%3C/p%3E%3Cp%3EThe%20charcuterie%20is%20a%20must%20here.%20For%20$26,%20the%20chef%20will%20choose%20four%20selections%20of%20salumi%20and%20charcuterie%20to%20array%20on%20a%20big%20wooden%20board.%20Ours%20came%20with%20lamb%20salame%20redolent%20of%20rosemary%20and%20garlic;%20French%20country%20salame%20with%20plenty%20of%20black%20pepper;%20mild%20rabbit%20pate%20seasoned%20with%20herbes%20de%20Provence%20and%20honey;%20and%20pork%20rillettes%20with%20blueberry,%20sage%20and%20ginger.%3C/p%3E%3Cp%3EAlongside%20was%20a%20loaf%20of%20crusty%20bread,%20whole-grain%20mustard,%20fennel%20salad,%20and%20a%20small%20bowl%20of%20wiggly%20aspic.%20Tear%20off%20some%20bread%20and%20have%20at%20it.%20There%E2%80%99s%20also%20a%20larger%20charcuterie%20board%20with%20eight%20selections%20($52)%20and%20one%20with%2012%20selections%20($78),%20making%20this%20a%20fine%20way%20to%20break%20bread%20with%20a%20group%20or%20to%20even%20have%20as%20your%20entire%20dinner%20with%20a%20glass%20of%20wine.%3C/p%3E%3Cp%3EAfter%20all%20that%20richness,%20the%20melon%20salad%20($13)%20was%20the%20perfect%20antidote%20to%20reset%20the%20taste%20buds.%20Thinly%20sliced,%20the%20sweet%20melon%20was%20tossed%20with%20equally%20thin%20rounds%20of%20cucumber%20and%20slivers%20of%20red%20onion.%20Melon%20and%20cucumber%20%E2%80%94%20both%20so%20crisp%20and%20quenching%20%E2%80%94%20are%20natural%20partners.%20It%20made%20me%20want%20to%20recreate%20this%20at%20home.%3C/p%3E%3Cp%3EA%20refreshing%20melon-cucumber%20salad.%3C/p%3E%3Cp%3EArancini%20and%20pickles.%3C/p%3E%3Cp%3EThe%20kitchen%20sent%20out%20an%20order%20of%20arancini%20($9).%20They%20arrived%20right%20out%20of%20the%20fryer,%20almost%20too%20hot%20to%20handle%20and%20perfectly%20crisp%20and%20deeply%20golden.%20These%20super%20cheesy%20risotto%20balls%20are%20to%20die%20for.%20Surprisingly,%20they%E2%80%99re%20not%20overly%20heavy%20tasting.%20Just%20two%20bites%20each,%20they%20let%20you%20indulge%20ever%20so%20%E2%80%94%20but%20not%20too%20much.%3C/p%3E%3Cp%3EThey%20arrived%20with%20house-made%20pickles%20($6),%20an%20assortment%20of%20crisp%20and%20tangy%20onions,%20carrots%20and%20green%20beans%20that%20go%20so%20well%20with%20the%20cured%20meats.%3C/p%3E%3Cp%3EThe%20grilled%20pork%20chop%20($36)%20was%20so%20massive,%20I%20took%20half%20of%20it%20home.%20Made%20from%20pastured%20pigs%20from%20Riverdog%20Farms%20in%20Guinda,%20CA,%20the%20meat%20is%20supremely%20succulent.%20One%20and%20a%20half%20inches%20of%20fat%20rim%20the%20chop.%20Don%E2%80%99t%20be%20alarmed.%20You%20probably%20don%E2%80%99t%20want%20to%20eat%20every%20inch%20of%20it,%20but%20do%20indulge%20in%20some%20of%20the%20fat.%20It%E2%80%99s%20juicy,%20porky%20wonderfulness%20that%20will%20linger%20on%20your%20palate.%3C/p%3E%3Cp%3EPresenting%20the%20pork%20chop.%3C/p%3E%3Cp%3EAgain,%20I%20remind%20you%20this%20is%20the%20smaller%20sized%20beef%20chop.%20Yup.%3C/p%3E%3Cp%3EEggplant%20and%20yogurt%20with%20Moroccan%20flair%3C/p%3E%3Cp%3EThe%20grilled%20beef%20chop%20came%20in%20two%20sizes%20($67%20and%20$81).%20My%20husband%20wisely%20asked%20the%20difference%20in%20sizes%20before%20ordering.%20With%20the%20%E2%80%9Csmaller%E2%80%9D%20size%20weighing%20in%20at%2028%20ounces%20and%20the%20%E2%80%9Clarge%E2%80%9D%20size%20coming%20in%20at%2036-ounces,%20Meat%20Boy%20actually%20opted%20for%20the%20former.%3C/p%3E%3Cp%3EThank%20goodness,%20too.%20Because%20what%20arrived%20on%20the%20plate%20was%20so%20humongous,%20my%20eyes%20fairly%20popped%20out,%20and%20I%20almost%20thought%20the%20kitchen%20had%20accidentally%20sent%20out%20the%20larger-sized%20chop.%20But%20nope,%20this%20was%20the,%20ahem,%20small%20one.%3C/p%3E%3Cp%3EIt%E2%80%99s%20essentially%20a%20bone-in%20rib%20eye,%20making%20it%20ever%20so%20tender%20and%20exquisitely%20beefy%20tasting.%20We%20took%20half%20of%20that%20home,%20too.%3C/p%3E%3Cp%3ETo%20go%20with%20that%20meat%20fest,%20we%20shared%20a%20side%20of%20Japanese%20eggplant%20($16),%20cooked%20in%20Moroccan%20flavors%20with%20chili%20and%20yogurt.%20And%20oh%20yes,%20there%20were%20some%20thin%20slivers%20of%20lamb%20pancetta%20mixed%20in%20for%20good%20meaty%20measure.%3C/p%3E%3Cp%3EAfter%
