Tuna And Mushroom Pasta

Ingredientes

  • 500 gm pasta, shell
  • 20 gm butter
  • 1 Tbsp. extra virgin olive oil
  • 2 clv garlic, crushed
  • 450 gm tuna, flaked
  • 4 x spring onions
  • 1 x red capsicum
  • 200 gm mushrooms
  • 1/4 c. white wine
  • 1 1/2 c. cream
  • 2 x egg yolks
  • 1 tsp parsley, minced
  •     salt, pepper

Direcciones

  1. Cook pasta in boiling salted water till tender. Drain well.
  2. Dice capsicum. Slice mushrooms and spring onions.
  3. Heat butter and oil in a pan, add in garlic, spring onions, capsicum, and sliced mushrooms and saute/fry for 3 min. Add in white wine and cook for 3 min stirring constantly till mushrooms are tender and liquid is reduced. Stir in cream and liquid removed tuna, bring to the boil, simmer 2 min to reduce slightly. Remove from heat and stir in egg yolks to slightly thicken. Add in herbs and season.
  4. Pour sauce over pasta and finish with grated parmesan cheese.
