Receta Tuna Pasta Salad
Ingredients:
- Pasta - 1 cup, cooked as per packet instructions
- Tuna - 100 gms, soaked in olive oil (or 1/2 Can)
- Green Peas - 50 gms, shelled, blanched
- Capsicum - 1/2, finely chopped
- Sweet Corn Kernels - 50 gms
- Baby Spinach Leaves - 1/2 cup
- Raisins - 2 tblsp
- Lemon Juice - 2 ts
- Parsley - 1/2 tbllsp
- Extra-Virgin Olive Oil - 1 tblsp
Method:
1. Mix the tuna, pasta, peas, capsicum, corn, raisins and spinach in a bowl.
2. Toss well until well mixed.
3. In a small bowl whisk together lemon juice, olive oil and parsley.
4. Drizzle over salad and toss gently.
5. Serve at once.
