Turkey Burgers and Fresh, Warm Rolls!
Good morning!
After I got home from a long day in the city yesterday I decided to make turkey burgers. I base my recipe on the cookbook “Everyday Food” from the Kitchen of Martha Stewart. They have really great meals that use simple ingredients and are little prep time. I also made butternut squash and sweet potato fries. The sweet potato fries were for Danny and I made the butternut squash fries because I didn’t want the squash to go bad. (I bought one pre-halved and peeled because I’m lazy it’s hard to cut.)
Ingredients:
- 1 1/2 pound organic ground turkey (I used (94% fat free)
- 1/2 cup grated part skim mozzarella cheese
- 1 slice ezekial bread (broken up into crumbs) (or 1/4 cup breadcrumbs)
- 1/4 cup dijon mustard
- 1/2 tsp sea salt
- 1/4 tsp pepper
Mix all ingredients in a bowl well. Split into 4 and mold into burger shape. Spray a pan or griddle with non-stick cooking spray. Make sure turkey burgers are cooked through, about 10-12 minutes per side.
This is Danny’s plate. You can see how huge the rolls I made were – they make the turkey burgers look teeny when they ARE NOT! They were so warm, crusty and delicious, I couldn’t help putting a little butter on mine and eating half of it like that. Oh, how I love my bread machine!
