Receta Turkey/Ham & Cheese Phyllo Cups
Ahhh…the military life….
I wish I can sit here and write that I am
the perfect military wife.
But I'm not.
I get upset when his PT test date comes around and all
he wants to eat are fruits, vegetables, and grains (PT tests
and food blogging do not go hand in hand).
I get upset when he takes 2 weeks of leave time
and then has to go back in to work for some reason
or another, mostly on his own accord.
I get upset when he works 14 plus hours at work
everyday…sometimes even on the weekends…leaving
my kids and I to fend for ourselves most of the time.
I rant and rave like a lunatic.
I hit the pillows on our bed as if they
were my worst enemy.
I cry.
Then I consider the alternative.
The alternative of having him miles and miles
away from home…in a far off place.
Which actually has happened lots of times
in the last 13 years.
All of a sudden, those 14 plus hours a day
seem pretty manageable. Stressful…but
manageable.
The fruits and vegetables I have
to cook for him, although repetitious, add a healthy
spark to our diets.
And him going into work on his vacation time all of a
sudden shows me how much devotion he has
to his job.
Does the perfect military wife exsist? Maybe.
But she's not in this house, that's for sure.
That's why I made these cute little phyllo cups…
to remind me that there actually is
perfection in the world.
Filled with turkey, ham, 3 types of cheeses, and
parsley, these little babies simply are that…
perfection in a phyllo cup.

Turkey/Ham & Cheese Phyllo Cups
- (makes 12 little cups…maybe more)
- Ingredients:
- Half of a block of frozen phyllo dough, thawed
- Non-stick cooking spray
- 3/4 cups of shredded Cheddar cheese
- 3/4 cups of shredded mozzarella cheese
- 4 oz. package of softened cream cheese
- 3/4 cup chopped deli ham
- 3/4 cup chopped deli turkey
- 1 tbsp. of dried parsley flakes
Directions:
1. Preheat oven to 350 degrees.
2. Take the block of thawed phyllo dough and separate the phyllo sheets one by one onto a clean, flat surface. Spray sheets with non-stick cooking spray.
3. With a knife, cut each sheet into 4 inch squares.
4. Take a muffin pan and place each square inside each muffin cup. You can have up to 4 squares in each cup.
5. In a medium bowl, mix the cheddar cheese, mozzarella cheese, softened cream cheese, chopped ham, and chopped turkey. Mix until very well combined.
6. Spoon mixture evenly into each phyllo cup (2-3 spoonfuls per cup.
7. Sprinkle each cup with the dried parsley flakes.
8. Bake for 12 to 15 minutes or until cheeses are melted.
