Turkey, Mango and Noodle Salad Recipe
Ingredients:
- Rice Noodles – 175 gms, cooked
- Onion – 1, finely sliced
- Mango – 1/4, peeled, sliced
- Turkey – 150 gms, cooked, shredded (leftover turkey is also fine)
- Coriander Leaves – handful, chopped
- Sweet Chilli Sauce – 1 tblsp
- Juice and Zest of 1/2 Lime
- Sesame Oil – 1/2 tblsp
Method:
1. Mix the chilli sauce, lime zest, lime juice and sesame oil in a bowl.
2. Whisk well.
3. Combine the noodles, onion, mango and turkey in a big bowl.
4. Pour the dressing over and toss well to mix.
5. Garnish with coriander leaves.
6. Serve.
Tip: Instead of Turkey, you can also use Chicken.
