Turkey Noodle Soup
INGREDIENTS:
- 2 tablespoons olive oil
- 1 cup celery-diced
- 1 cup-carrots-diced
- 1 cup onion-diced
- Salt & pepper to taste
- 1 tablespoon Herbes de Provence
- 2 cups cut up cooked turkey
- 8 ounces egg noodles
DIRECTIONS:
In a large stock pot, heat the olive oil over medium-high heat. Add in the celery, carrots and onion and saute until soft, about 10-12 minutes. Season with salt, pepper and Herbes de Provence. Add in the turkey and then pour over the stock, let simmer for 15-20 minutes or until all is heated, the add in the egg noodles a few minutes before serving.
