Turkey Sausage and Spicy White Beans

An adaptation of a recipe I tried from Debi Mazar's TV show, Extra Virgin. I like my version better. I'm sure another type of sausage would work as well but I have not tried another.

Ingredientes

  • 8 turkey sausages
  • 3 tbsp. olive oil
  • 3 cans cannellini beans, drained and rinsed
  • 1 medium onion, diced
  • 3-4 cloves garlic, minced
  • 1 lb. cherry tomatoes, quartered
  • 2 handsful of parsley, chopped
  • 1 tsp. (or more if spicier is desirable) red pepper flakes
  • 3 bay leaves
  • 1/2 cup dry red wine
  • salt & pepper

Direcciones

  1. Brown sausages in medium-sized heavy pot over med./high heat in olive oil. When well browned, remove from pot and set aside.
  2. Add onions and garlic and cook gently till soft and beginning to brown. Add remaing ingredients.
  3. Raise heat to high until boiling then reduce heat to low. Allow sauce to cook until slightly thickened.
  4. Return sausages to pot, cover, and cook over low heat for 15-20 minutes.
  5. Garnish with additional chopped parsley right before serving.
