Turkey Wild Rice Fruit Salad

Ingredientes

  • 1 c. wild rice
  • 2 c. cubed, cooked turkey
  • 1 c. seedless grapes
  • 1 (8 ounce.) can pineapple chunks, liquid removed
  • 1 c. diced celery
  • 1/2 c. mayonnaise
  • 1/2 c. lowfat sour cream
  • 1 teaspoon curry pwdr
  • 1 avocado, peeled and cut into chunks
  • 1/2 c. dry roasted cashews
  • Endive or possibly other salad greens

Direcciones

  1. Cook wild rice according to package directions; cold. Combine turkey, grapes, pineapple, celery, and cooled rice. Blend mayonnaise, lowfat sour cream, and curry pwdr, then pour over salad ingredients. Mix; chill. Just before serving, add in cashews and avocado. Serve on salad greens.
