Receta Turkish Rice With Nuts And Herbs

- Rinse rice and set aside. Heat oil and saute/fry onions in large sauce pan till they begin to color. Add in pine nuts and saute/fry 3 min. Blend in parsley, allspice, salt, pepper, cayenne pepper and currants. Add in rice. Add in water in that currants were soaked, tomato, and warm water. Cover and simmer till rice is tender, about 15 min. Add in pistachios 5 min before rice is done. Remove from heat, remove cover, place clean dish towel and replace cover and set aside about 30 min. Transfer rice to serving platter, fluff and fold in mint. Serve at room temperature. Serves 6 ish.
- Is delicious with leg of lamb, and with fish.
