Turtle Cookie Bars
Ingredients:
FOR THE CRUST:
- 2 sticks butter-at room temperature
- 1/2 cup sugar
- 1/2 cup powdered sugar
- 1 tablespoon vanilla extract
- 2 cups flour
- FOR CARAMEL LAYER:
- 1 bag (14 ounces) caramels, unwrapped and chopped up
- 2 tablespoons heavy cream
- FOR THE NUT LAYER:
- 1 cup pecans-chopped
- FOR CHOCOLATE LAYER:
- 1 (12 ounce) bag chocolate chips
- 1 tablespoon butter
- 2 teaspoons flaky sea salt
Directions:
Preheat oven to 325 degrees. Spray a 9 x 13 glass baking dish with non-stick spray; set aside.
In a mixer, cream together the butter and the sugars until fluffy. Add in the vanilla. Gradually add the flour and mix thoroughly. Press into the bottom of the baking dish and prick holes all over the bottom with a fork. Bake for 35 minutes or until golden.
Remove from the oven and let cool while you do the rest. Melt together the caramels with the cream over low heat, stirring frequently. Pour over the crust and smooth.
Distribute the pecans over the caramel evenly. Push them down into the caramel a little, this will ensure that the layers don't separate when you add the chocolate layer.
In the microwave, slowly melt the chocolate chips and butter, checking and stirring every 30 seconds until it is melted. Pour the chocolate over the nuts and spread it evenly. Quickly sprinkle the flake sea salt over the top. Refrigerate until hard, then cut into small pieces-a little goes a long way.
