Tuscan Bean Soup
Boy oh Boy, What a Week!! Sometimes the only thing that makes you feel better is a big bowl of soup!
- 3 T olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 green pepper, chopped
- 2 ribs celery, chopped
- 2 carrots, peeled and sliced
- 1 pound Sweet Italian Sausage
- 2 T dried parsley flakes
- 1/2 t salt
- 1/4 t pepper
- 2 t dried Italian seasoning
- 8 cups beef broth
- 1 (14 1/2 oz) can cannellini beans, drained and rinsed
- 1 (14 1/2 oz) can diced tomatoes
- 1 cup mini penne pasta
- 1 cup green beans, fresh or frozen, cut in half
- 1 small zucchini, sliced
- 1 cup fresh or frozen spinach, chopped and squeezed dry if using frozen
In Dutch oven, in 3 T olive oil saute' onion, garlic, green pepper, celery, carrots, sweet sausage, parsley flakes, salt and pepper. Cook until sausage is browned and vegetables are tender. Drain. Add 8 cups beef broth and diced tomatoes. Bring to a boil. Add penne pasta, reduce heat to simmer, then add green beans, zucchini and spinach. Simmer for 30 minutes. Serve with Parmesan Cheese.
