Receta Twelve Days of Cocktails and Hors d’oeuvres (Fourth Day)
Wow, so here we are on the Fourth day already. If you have been following along with us, you will now have a nice little collection of 4 Asian inspired cocktails and Hors d’oeuvres, ready to group together for a party!
I like the way these Cucumber Cups filled with Wasabi Spiked Guacamole and Smoked Salmon round out the mix of flavors and textures we have put together so far. They are a playful take on sushi, with lots of color, crisp flavors, and crunch. There is a little bite from the wasabi, which is balanced with the cool, creamy avocado.
Day 5 will begin a new set of flavors, with inspiration coming from the Mediterranean…stay tuned!
- Cucumber Cups with Wasabi Spiked Guacamole and Spiked Salmon
- 2 ripe avocados, peeled,cored, chopped
- Juice of 1 lime
- 1 teaspoon unseasoned rice wine vinegar
- 2 teaspoon wasabi paste
- 2 tablespoons chopped cilantro
- 2 tablespoons black sesame seeds
- 2 English cucumbers, cut into 1/2-inch thick slices
- 1/4 pound smoked salmon, sliced into thin, 1×1-inch, 1/4-inch thick strips
- Additional black sesame seeds for garnish
Place avocados in a medium bowl. Mash well using 2 forks. Add remaining ingredients and mix thoroughly.
Using a teaspoon, scoop out center of cucumber slices, being careful not to go all the way through the bottom of the cucumber.
Spoon 1 teaspoon of guacamole in center of cucumber round. Top with a few strips of smoked salmon and garnish with additional black sesame seeds.
Makes approximately 30 rounds
