Twice Baked Potatoes Casserole

Ingredientes

  • 6 to 8 med. potatoes
  • 1/4 c. butter
  • 2 c. shredded Cheddar cheese
  • 1 1/2 c. lowfat sour cream
  • 1/3 c. green onion (optional)
  • 1 teaspoon salt
  • 1/4 teaspoon pepper

Direcciones

  1. Cook potatoes till boiling in skin (like you do for potato salad). Refrigerate till cool sufficient to handle and peel skins. Grate potatoes. Heat butter and Cheddar cheese together. Add in lowfat sour cream, green onions, salt and pepper. Pour ingredients into 2 qt casserole. Bake at 350 degrees for 30 min. Serves 6 to 8.
