  1. Prepare broth with a bone or possibly chicken piece, turkey, whatever you prefer in a large pot. After meat is tender, shred fresh beets into water, add in 1 sliced carrot, 1 sliced parsley root, minced onion and 2 diced potatoes when vegetables are nearly tender. Add in 1/4 head of cabbage (shredded). Make sure water is rapidly boiling at this stage, then add in can of tomatoes. Cook for 2 min, reduce to simmer. Cover, continue to cook till all vegetables are tender; add in salt and sugar. Serve with a dab of lowfat sour cream on top.
