Uncreamy Cole Slaw
A few weeks back, hubby and I tried a new place for fish fry. Not a new place as in grand opening, but a new place that we had never been to. The only redeeming quality of the whole affair was the cole slaw! But that cole slaw was GOOD! And it didn’t have a creamy dressing, it was dressed with something else. And since I didn’t want to talk with our waitress or the proprietor of the establishment any more than necessary (I may have blown a gasket about the horrible fish), I have been scouting out recipes to try it myself. This isn’t quite the same, but it is good. If you have a great cole slaw recipe without a creamy dressing, could you let me know?? Muchas gracias.
Uncreamy Coleslaw
INGREDIENTS:
1 large head of cabbage- shredded
- 1/4 cup salt
- 1/4 cup water
- 1 cup apple cider vinegar
- 2 cups sugar
- 1/4 teaspoon ground black pepper
- 1 teaspoon onion powder
- 1 carrot-grated
DIRECTIONS:
In a large bowl, add the cabbage, salt and enough water to cover the cabbage. Let it soak for about an hour. Meanwhile, make the dressing: In a medium saucepan combine the 1/4 cup water, apple cider vinegar, sugar and black pepper, bring to a boil. Boil for 1 minute thereafter and remove from the heat. Cool completely while the cabbage is soaking. After it has cooled, add in the onion powder, rinse and strain the water and salt from the cabbage, add the carrots and dress the salad.
