Upside Down Apple Pie
My husband loves apple pie...I'd rather pass! Every time I make it he insists I try a bite and taste how good it is. For some reason I just don't like it. Then the other day I was browsing recipes and came across Upside Down Apple Pie. I was excited that I had all the ingredients on hand so I whipped one up and I must say, it's quite delicious! I did change it a little, but the concept is the same. It's very simple to put together and it looks beautiful too....enjoy!
Ingredients are as follows:
topping:
- 6 Tbsp. butter, melted
- 3/4 C brown sugar
- 1/2 C chopped pecans (or walnuts)
- filling:
- 1/2 C sugar
- 1 tsp. cinnamon
- 2 tsp. vanilla
- 2 Tbsp. butter, melted
- 6 apples, peeled, cored and sliced
1 package refrigerated pie crusts
Directions:
Preheat oven to 350 degrees. Place a cookie sheet on the second rack to catch the drips if it bubbles over!
Line a 10" pie plate with foil and spray with non-stick cooking spray.
Mix together the melted butter, brown sugar and pecans; spread into pan.
Place one of the crusts on top and press down into the pan; set aside.
Stir the sugar, cinnamon, vanilla and butter together; mix in the apples.
Evenly spread into the pie crust.
Place the other crust on top and crimp the edges so it's sealed; cut a slit on top.
Bake for 60-75 minutes; until golden brown.
Invert pie onto a serving plate (my pie plate is glass so it's hard to see!).
Carefully remove the pie plate and slowly peel off the foil.
Slice, serve and enjoy!
