%20and%20had%20a%20custom%20perfume%20made%20for%20me.%20Now%20I'm%20not%20a%20real%20perfume%20kind%20of%20person.%20I%20like%20clean.%20I%20like%20citrus.%20I%20like%20subtle.%20I%20was%20so%20glad%20when%20the%20disco%20days%20of%20White%20Musk%20were%20behind%20me,%20and%20don't%20get%20me%20started%20on%20Patchouli.%20I'm%20totally%20down%20with%20John%20Cusack%20on%20that.%3C/p%3E%3Cp%3EGet%20Your%20Patchouli%20Stink%20Outta%20My%20Store%3C/p%3E%3Cp%3EBut%20there%20was%20something%20really%20special%20about%20having%20something%20made%20just%20for%20me.%20It's%20kind%20of%20the%20way%20I%20feel%20about%20a%20lot%20of%20stuff.%20It's%20why%20I%20started%20getting%20into%20making%20as%20many%20things%20as%20I%20can%20from%20scratch.%20The%20custom%20touch.%20It's%20what%20those%20tony%20British%20banker%20guys%20are%20always%20talking%20about%20when%20%20they%20mention%20bespoke%20suits%20and%20bench%20made%20shoes.%20Well,%20I%20thought,%20what%20about%20some%20bespoke%20spices?%20Custom%20made%20just%20for%20me.%20Of%20course%20I%20was%20going%20to%20have%20to%20make%20them,%20but%20what%20the%20hey..,%20that's%20what%20I%20do,%20right?%3C/p%3E%3Cp%3EOne%20of%20the%20basics%20in%20any%20sort%20of%20cooking%20is%20spices,%20and%20Indian%20cooking%20uses%20a%20lot%20of%20them.%20Spices%20and%20spice%20blends.%20Curries%20and%20masalas.%20Panch%20purans%20and%20chaunks.%20Anyone%20wanting%20to%20cook%20Indian%20quickly%20learns%20that%20curry%20powder%20out%20of%20a%20box%20does%20not%20a%20curry%20make,%20and%20every%20good%20Indian%20cook%20has%20their%20own%20special%20blend%20of%20spices.%20It's%20similar%20to%20the%20%22gravy%22%20found%20in%20Italian%20American%20homes.%20Everybody's%20family%20has%20their%20own%20special%20way%20of%20making%20it.%3C/p%3E%3Cp%3EAfter%20toasting%20and%20grinding%20spices%20for%20Indian%20food%20for%20the%20last%2021%20years,%20I%20thought%20I'd%20pretty%20much%20seen%20it%20all.%20And%20then%20I%20met%20Vadouvan.%20If%20I%20hadn't%20taken%20on%20the%20challenge%20of%20attempting%20to%20add%20an%20Indian%20twist%20to%20Workman%20Publishings'%20Bastille%20Day%20Celebration%20of%20Richard%20Grausmans'%20French%20Classics%20Made%20Easy%20I%20never%20would%20have%20heard%20of%20Vadouvan.%3C/p%3E%3Cp%3ESo%20just%20what%20is%20this%20mysterious%20Vadouvan?%20In%20doing%20my%20research%20into%20the%20connection%20between%20Indian%20and%20French%20cuisine,%20I%20discovered%20a%20spice%20blend%20that%20found%20it's%20way%20back%20to%20Europe%20from%20the%20Subcontinent.%20Unlike%20the%20curry%20powder%20that%20the%20Brits%20took%20away,%20the%20French%20came%20up%20with%20a%20chunky%20blend%20of%20onions,%20shallots,%20leeks%20and%20assorted%20roasted,%20toasted,%20ground%20spices.%20But%20that's%20where%20the%20specifics%20end,%20because%20Vadouvan%20can%20be%20customized%20and%20tailored%20to%20one's%20individual%20taste.%20Pinning%20down%20one%20basic%20recipe%20is%20pretty%20nearly%20impossible.%3C/p%3E%3Cp%3EIndian%20Vadouvan%20Watercress%20Soup%3C/p%3E%3Cp%3ESo%20here's%20how%20I%20%20made%20my%20vadouvan:%3C/p%3E%3Cp%3EChop%20%20up:%3C/p%3E%3Cp%3E3%20onions%3C/p%3E%3Cp%3E3%20leeks%3C/p%3E%3Cp%3E12%20shallots%3C/p%3E%3Cp%3EDrizzle%20them%20well%20with%20olive%20oil.%3C/p%3E%3Cp%3ESpread%20them%20onto%20a%20parchment%20paper-covered%20cookie%20sheet.%3C/p%3E%3Cp%3ERoast%20them%20in%20a%20350%20degree%20oven%20for%20about%201%20and%201/2%20hours.%3C/p%3E%3Cp%3EStir%20them%20around%20occasionally%20so%20nothing%20sticks%20and%20burns.%20When%20they're%20nice%20and%20caramelized,%20take%20them%20out.%3C/p%3E%3Cp%3EMeanwhile%20while%20all%20that's%20going%20on,%20dry%20toast%20in%20a%20skillet:%3C/p%3E%3Cp%3EAfter%20the%20spices%20are%20toasted,%20put%20everything%20into%20a%20spice%20grinder%20or%20blender%20and%20whirl%20it%20into%20powder.%3C/p%3E%3Cp%3EMix%20the%20ground%20spices%20into%20the%20caramelized%20onions%20etc.%3C/p%3E%3Cp%3EWhen%20the%20mixture%20is%20blended,%20give%20it%20a%20taste.%20Add%20in%20a%20bit%20of%20light%20brown%20sugar,%201%20tsp%20at%20a%20time%20until%20the%20spice%20mix%20has%20a%20nice,%20hot,%20spicy,%20blend%20with%20a%20sweet%20finish.%20Or%20not.%20You%20may%20like%20it%20just%20as%20it%20is,%20or%20want%20to%20put%20in%20some%20salt.%20You%20may%20choose%20to%20add%20garlic%20cloves%20to%20the%20onion%20mix%20or%20leave%20out%20the%20leeks.%20It's%20up%20to%20you.%20It's%20that%20kind%20of%20recipe.%20Vadouvan%20keeps%20for%20a%20month%20in%20the%20fridge%20in%20a%20nice%20tight%20jar.%20In%20the%20freezer%20it%20will%20last%206%20months.%3C/p%3E%3Cp%3EBut%20now%20the%20big%20question.%20You%20have%20your%20vadouvan,%20what%20to%20do%20with%20it?%20%20Well,%20it%20can%20be%20added%20to%20sauces%20a%20tablespoon%20or%20teaspoon%20at%20a%20time.%20It%20can%20be%20put%20into%20dips%20or%20soups,%20and%20it%20can%20also%20be%20put%20into%20what%20goes%20into%20soups.%20Which%20is%20exactly%20what%20I%20did%20with%20it.%3C/p%3E%3Cp%3EI%20took%20Richard%20Grausman's%20%20recipe%20for%20French%20Watercress%20Soup%20which%20you%20can%20find%20here.%3C/p%3E%3Cp%3EI%20decided%20to%20make%20a%20sirkhand%20out%20of%20plain%20yogurt.%20%20(Take%20a%20cup%20of%20yogurt%20and%20place%20it%20in%20a%20yogurt%20strainer%20suspended%20over%20a%20glass.%20Let%20it%20drain%20for%20at%20least%204%20hours,%20or%20until%20it's%20slightly%20thickened.)%3C/p%3E%3Cp%3EYou%20may%20also%20use%20thickened%20Greek%20style%20yogurt.%3C/p%3E%3Cp%3EWhip%20the%20sirkhand%20until%20it's%20creamy%20and%20add%20in%20a%20nice%20dollop%20of%20vadouvan.%20Swirl%20a%20tablespoon%20of%20this%20mixture%20into%20each%20serving%20of%20soup.%3C/p%3E%3Cp%3EThat's%20it.%20You're%20done.%20You've%20added%20Indian%20flavors%20to%20a%20French%20classic.%3C/p%3E){kind=link}
