Receta Valentine Sandwich Cookies
Valentine Sandwich Cookies
- 1 cup sugar
- 1 cup butter, softened
- 3 T milk
- 1 t vanilla extract
- 1 egg
- 3 cups flour
- 1-1/2 t baking powder
- 1/2 t salt
- 1/2 t peppermint extract
- 1/4 to 1/2 t red food color
In a large bowl, combine 1 cup sugar, butter, milk, vanilla and egg; blend well. Lightly spoon flour into measuring cup; level off. Add flour, baking powder and salt; mix well. Divide dough in half; refrigerate one half. To the other half of dough, add 1/2 t peppermint extract and red food color for desired color. Refrigerate at least 1 hour for easier handling.
Heat oven to 400. On lightly floured surface, roll 1/3 of white dough to 1/8 inch thickness. Cut with floured 2-1/2 inch heart shaped cookie cutter. Place 1 inch apart on ungreased cookie sheets. Repeat with 1/3 of pink dough. Using floured 1-inch heart shaped cookie cutter, cut center from each pink and white cookie. Remove centers, replace each center in cookie of opposite colored dough. Repeat with remaining dough.
Bake at 400 for 5-9 minutes or until edges are light golden brown. Cool 1 minute; remove from cookie sheets. Cool on wire rack.
Frost cookies with Peppermint Frosting
Note: Change the taste of these cookies by changing extract flavors. Try: almond, lemon, orange or rum extracts.
Peppermint Frosting:
3 cup sifted powdered sugar
1/4 c butter, room temperature
3 oz. cream cheese, room temperature
1 t peppermint extract
6-8 t milk
With electric mixer cream butter, cream cheese and peppermint extract. Add powdered sugar, 1 cup at a time, add milk as needed. Mix until light and fluffy.
