Vanilla Bean Gelato
On the off chance that you would like to splurge on calories this weekend, I offer up to you this Vanilla Bean Gelato. There really isn’t anything simpler than a homemade gelato in your ice cream maker. This hits the spot on so many levels because you can eat it plain which is devine, add chocolate syrup or lots of fruit (such a healthy version!).
- I myself, like it plain so I can really get the taste of the pure vanilla beans…
- PS: I know vanilla beans are very expensive, so buy them on amazon, I can get 20 for under $10.00!
- Vanilla Bean Gelato
- Yield: 1 quart
- Ingredients:
- 2 cups milk
- 1 cup heavy cream
- 1 vanilla bean-split with vanilla seeds scraped from pod
- 4 large egg yolks
- 1/2 cup sugar
- 1 teaspoon vanilla
Directions:
In a saucepan, combine milk and cream. Add split vanilla bean and seeds. Warm until liquid just starts to simmer. Remove from heat.
In a mixer bowl, beat yolks and sugar until light- 2-3 minutes. Slowly add a half cup of the hot liquid to the yolks, mixing constantly. Then slowly add the rest of the liquid while continuing to whisk.
Return liquid to saucepan and cook over medium heat, stirring constantly, until the mixture thickens (it took me about 15 minutes). Pour through a sieve to remove anyting left from the bean and any egg. Regrigerate, covered overnight.
Process in your ice cream maker according the manufacturer's directions. Freeze and soften before serving.
