%20kicks%20off%20the%20start%20of%20the%20month,%20mine%20follows%20two%20weeks%20later,%20my%20mama's%20and%20bestest%20friend%20the%20following%20week,%20and%20at%20the%20end%20of%20the%20month%20is%20my%20grandmother's%20birthday.%20I'm%20not%20even%20about%20to%20start%20the%20list%20of%20acquaintances%20I%20have%20whose%20birthday's%20are%20mixed%20into%20that%20jumble.%3C/p%3E%3Cp%3EThe%20wallet%20is%20lighter%20the%20month%20of%20June%20but%20our%20stomachs%20are%20heavier%20with%20all%20of%20the%20yummies%20we%20get%20to%20eat%20at%20the%20celebrations.%3C/p%3E%3Cp%3EInstead%20of%20cupcakes%20this%20year%20for%20Itty%20Bitty's%20birthday%20I%20decided%20to%20make%20him%20a%20cake%20since%20I%20was%20sold%20on%20buying%20an%20edible%20cake%20image%20that%20had%20been%20customized%20just%20for%20him.%20However,%20I%20did%20buy%20Disney%20Cars%20cupcake%20liners%20just%20in%20case%20I%20had%20to%20go%20to%20my%20Plan%20B%20if%20the%20idea%20failed.%3C/p%3E%3Cp%3EHe's%20been%20asking%20for%20cupcakes%20ever%20since.%20Why%20not%20make%20cupcakes%20in%20spirit%20of%20all%20the%20June%20birthdays?%3C/p%3E%3Cp%3EI%20decided%20on%20Vanilla%20Cupcakes%20with%20Buttercream%20Frosting%20from%20my%20cookbook,%20Good%20Things%20For%20Kids:%2063%20Fun%20and%20Easy%20Recipes%20the%20Whole%20Family%20Will%20Love.%3C/p%3E%3Cp%3EIt%20obviously%20wasn't%20my%20day%20to%20put%20on%20a%20baker's%20hat.%20The%20amount%20of%20batter%20the%20recipe%20called%20for%20didn't%20fill%20up%20all%20of%20the%20cups%203/4%20full%20so%20I%20didn't%20get%20that%20domed%20top.%20Sigh.%20When%20making%20the%20icing,%20cringe,%20I%20didn't%20have%20enough%20egg%20whites,%20whisking%20the%20sugar%20and%20egg%20whites%20over%20simmering%20water%20was%20new%20to%20me,%20and%20then%20having%20to%20form%20stiff%20peaks...%20OH%20NO!%20Itty%20Bitty%20requested%20blue%20frosting%20and%20I%20ended%20up%20with%20dye%20all%20over%20my%20hands%20and%20had%20a%20get%20together%20with%20a%20friend%20not%20even%20an%20hour%20later.%20Double%20sigh.%3C/p%3E%3Cp%3EAfter%20letting%20the%20cupcakes%20cool%20I%20frosted%20them.%20Itty%20Bitty%20had%20actually%20decided%20to%20park%20himself%20at%20the%20table%20and%20waited%20patiently%20for%20me%20to%20finish%20frosting%20them%20all.%20I%20place%20the%20cupcake%20in%20front%20of%20him%20and%20after%20one%20bite%20he%20told%20me,%20%22No%20thank%20you%20mama.%20I%20get%20down.%22%3C/p%3E%3Cp%3EHe's%20not%20much%20for%20sweets%20unless%20it's%20chocolate%20so%20I%20figured%20this%20was%20the%20case.%3C/p%3E%3Cp%3EI%20took%20one%20bite%20of%20it%20and%20realized%20why%20he%20didn't%20want%20it.%20The%20cupcake%20did%20not%20turn%20out%20light%20and%20fluffy.%20It%20even%20had%20crater%20sized%20holes%20in%20them!?!%20The%20icing%20was%20delicious%20though.%20Sigh.%20No%20idea%20how%20I%20went%20wrong.%3C/p%3E%3Cp%3ENeedless%20to%20say,%20I,%20myself%20will%20not%20be%20making%20this%20recipe%20again.%20I%20was%20really%20looking%20forward%20to%20being%20able%20to%20mark%20off%20number%203%20from%20my%20%22Stir%20The%20Pot%22%20page.%20Sigh.%3C/p%3E%3Cp%3EVanilla%20Cupcakes%20with%20Buttercream%20Icing%3C/p%3E%3Cp%3EGood%20Things%20for%20Kids:%2063%20Fun%20and%20Easy%20Recipes%20the%20Whole%20Family%20Will%20Love%3C/p%3E%3Cp%3EMakes%202%20Dozen%20Cupcakes%20and%205%201/2%20Cups%20Icing%3C/p%3E%3Cp%3EStars%20of%20the%20Show%20for%20the%20Cupcakes:%3C/p%3E%3Cp%3EAnd%20Action:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees.%20Line%20two%2012-cup%20cupcake%20pans%20with%20paper%20lines.%20In%20a%20medium%20bowl,%20whisk%20together%20flour,%20baking%20powder,%20and%20salt.%20In%20a%20large%20mixing%20bowl,%20cream%20together%20butter%20and%20sugar%20until%20light%20and%20fluffy,%20about%204%20minutes.%20Add%20eggs%20one%20at%20a%20time,%20mixing%20until%20incorporated.%20Scrape%20down%20sides%20of%20bowl,%20beat%20in%20vanilla.%3C/p%3E%3Cp%3ETo%20bowl%20with%20butter%20mixture,%20add%20flour%20mixture%20and%20milk%20alternately,%20beginning%20and%20ending%20with%20flour.%20Scrape%20down%20sides%20and%20bottom%20of%20bowl.%3C/p%3E%3Cp%3EDivide%20batter%20evenly%20among%20liners%20filling%20about%203/4%20full.%20Bake%20until%20tops%20spring%20back%20when%20touched%20about%2020%20minutes.%20Rotate%20pans%20once%20if%20needed.%20Transfer%20to%20wire%20rack%20and%20let%20cool%20completely%20before%20decorating%20as%20desired.%20Cupcakes%20can%20be%20baked%201%20week%20ahead%20and%20frozen.%20Place%20on%20a%20baking%20sheet%20and%20freeze,%20then%20store%20in%20a%20resealable%20plastic%20bag%20in%20the%20freezer.%20Decorate%20the%20cupcakes%20no%20more%20than%20a%20day%20before%20serving.%3C/p%3E%3Cp%3EStar%20of%20the%20Show%20for%20the%20Icing:%3C/p%3E%3Cp%3E1%201/2%20cups%20sugar%3C/p%3E%3Cp%3E6%20large%20egg%20whites%3C/p%3E%3Cp%3E2%20cups%20(4%20sticks)%20unsalted%20butter,%20cut%20into%20small%20pieces,%20room%20temperature%3C/p%3E%3Cp%3E1%20tsp%20pure%20vanilla%20extract%20-%20I%20used%20vanilla%20bean%20paste
