Vanilla Refrigerator Cookies
Ingredients
- 1-1/2 c
- all purpose flour
- 1/2 t
- baking soda
- 3/4 t
- salt
- 1/2 c
- soft shortening
- 1 c
- sugar
- 1
- egg
- 2-3 t
- vanilla extract
- 1/2 c
- chopped pitted dates
- 1/2 c
- chopped nuts, optional
Cooking Directions
Combine flour, soda, and salt. Mix until creamy, shortening, sugar, egg, vanilla.
Gradually add flour mixture, dates and nuts if using, mix well.
Turn dough onto large piece of waxed paper. Shape into roll 2 inches in diameter.
Refrigerate several hours, overnight, or several weeks.
At baking time: heat oven to 375. Slice dough 1/8 to 1/4 inch thick. (Slice off only what you need; return unsliced dough to refrigerator and bake later as needed.) Place on ungreased cookie sheet. Bake about 10 mins., or until golden brown.
This is a very old recipe. I found it in a recipe booklet that was my mom's. I remember making these cookies with her, and I thought it was so cool that you could keep the dough in the refrigerator and slice & bake cookies anytime:) I had 2 visitors on the Lake today. I am not positive, but I think they are either; Tundra Swans or Trumpeter Swans~They were Beautiful~
