%20canning%20books,%20I%20went%20with%20Strawberry%20Rhubarb%20and%20Lavender%20Strawberry%20jam.%20In%20the%20end,%20I%20still%20had%20an%20ample%20pile%20of%20rhubarb%20remaining.%20I%E2%80%99ve%20made%20rhubarb%20chutney%20in%20the%20past,%20and%20while%20good,%20I%20didn%E2%80%99t%20find%20much%20use%20for%20it.%20A%20simple%20jam%20was%20in%20order%20and%20Food%20in%20Jars%E2%80%99%20vanilla%20rhubarb%20jam%20was%20quite%20intriguing.%3C/p%3E%3Cp%3EThe%20recipe%20encouraged%20the%20addition%20of%20Earl%20Grey%20tea.%20I%20love%20the%20idea%20of%20infusing%20teas%20into%20a%20recipe,%20but%20it%E2%80%99s%20something%20I%20haven%E2%80%99t%20done%20enough%20in%20my%20own%20cooking.%20Here%20was%20the%20perfect%20opportunity.%20The%20addition%20of%20Earl%20Grey%20tea%20helped%20offset%20the%20tartness%20from%20the%20rhubarb%20and%20sweetness%20from%20the%20sugar.%20Adding%20some%20vanilla%20seeds%20further%20mellowed%20and%20warmed%20the%20jam.%20The%20original%20recipe%20called%20for%20liquid%20pectin,%20something%20I%E2%80%99ve%20never%20used.%20If%20I%20use%20pectin%20at%20all,%20I%20stick%20to%20the%20powdered%20stuff.%3C/p%3E%3Cp%3EThe%20recipe%20took%20a%20lot%20of%20babysitting.%20I%20burned%20the%20original%20batch%20by%20walking%20away%20for%20more%20than%20a%20few%20minutes.%20Even%20through%20its%20charred%20remains,%20I%20knew%20this%20could%20be%20something%20good.%20I%20dragged%20myself%20back%20to%20the%20market%20for%20another%203%20pounds%20of%20rhubarb.%20Even%20with%20my%20extra%20travel%20and%20double%20the%20labor,%20the%20jam%20was%20worth%20every%20minute%20of%20my%20time.%3C/p%3E%3Cp%3ESteep%20Earl%20Grey%20tea%20in%201%20cup%20boiling%20water%20for%2010%20minutes%20until%20dark%20and%20very%20strong.%20In%20a%20large%20dutch%20oven%20combine%20rhubarb,%202%20cups%20sugar%20and%20tea%20and%20bring%20to%20a%20boil.%20Reduce%20heat%20and%20add%20vanilla%20bean%20(seeds%20and%20pot),%20lemon%20juice%20and%20salt.%20Allow%20pot%20to%20simmer%2020-30%20minutes%20until%20rhubarb%20has%20completely%20broken%20down.%20Remember%20to%20stir%20frequently%20to%20prevent%20burning.%3C/p%3E%3Cp%3EIn%20a%20small%20bowl,%20mix%20one%20tablespoon%20of%20sugar%20with%20pectin.%20Return%20rhubarb%20to%20a%20vigorous%20boil,%20and%20stir%20in%20pectin%20mixture%20until%20completely%20dissolved.%20Continue%20boiling%203-4%20minutes,%20stirring%20constantly%20until%20jam%20thickens.%20Remove%20from%20heat.%20Remove%20vanilla%20pods%20and%20skim%20any%20foam%20that%20might%20have%20formed.%20Ladle%20into%20sterile%20hot%20half-pint%20jars%20leaving%201/4-inch%20headspace.%20Process%20in%20a%20boiling%20water%20bath%20for%2015%20minutes.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E){kind=link}
