Vazhaithandu Sweet Corn Poriyal Recipe
Serve as a side dish with rice, pulao or biryani.
Ingredients:
- Vazhaithandu – 1/2 cup, finely chopped
- Buttermilk – 1 1/2 tblsp
- Sweet Corn Kernels – 2 tblsp
- Turmeric Powder – a small pinch
- Coconut – 1 1/2 tblsp, grated
- Salt as per taste
- For Tempering:
- Mustard Seeds – little
- Urad Dal – little
- Dry Red Chilli – 1
- Asafoetida Powder – a small pinch
- Curry Leaves – few
- Oil – 1/2 tsp
Method:
1. Heat a pan over medium flame.
2. Add the vazhaithandu, salt, turmeric powder and buttermilk.
3. Cook for a minute or two.
4. Add little water, sweet corn and cook until tender.
5. Fry the tempering ingredients in 1/2 tsp oil and add to the pan.
6. Stir well and add the grated coconut.
7. Remove after a minute.
8. Serve.
