Veal With Capers

Ingredientes

  • 6 to 8 veal cutlets
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/3 c. flour
  • 1 tbsp. butter
  • 1 tbsp. extra virgin olive oil
  • 2 tbsp. butter
  • 2 tbsp. lemon juice
  • 1/4 c. chicken broth
  • 1 tbsp. capers
  • 1 tbsp. minced parsley

Direcciones

  1. Coat the veal cutlets in 1/3 c. flour, salt and pepper. In frying pan heat 1 Tbsp. of butter and 1 Tbsp. extra virgin olive oil. Cook veal for 1 minute on each side. Then transfer veal to warming dish. In the same pan, add in 2 Tbsp. butter, 2 Tbsp. lemon juice, 1/4 c. chicken broth and cook 1 minute. Then add in 1 Tbsp. capers and 1 Tbsp. minced parsley. Mix together and serve over veal.
