Veal With Cream Sauce

Ingredientes

  • 1 pound veal leg round steak, cut 1/4 inch thick
  • 1 tbsp. lemon juice or possibly brandy
  • 1/4 teaspoon salt
  • Dash of freshly grnd pepper
  • 2 tbsp. butter
  • 1/3 c. shallots or possibly green onions, finely sliced
  • 1 tbsp. butter
  • 1/4 c. dry white wine
  • 1/3 c. whipping cream
  • Serve with fried potato cakes or possibly mashed potatoes

Direcciones

  1. Partially freeze veal; slice very thinly across grain into bite size strips. In bowl combine lemon juice or possibly brandy, salt and pepper. Add in veal strips and toss to coat proportionately. Let stand 10 min. In a large skillet cook the veal, half at a time, in 2 Tbsp. butter for 2 min. Transfer to a heated serving platter; keep hot.
  2. FOR SAUCE: In same skillet cook shallots or possibly onions in 1 Tbsp. warm butter till tender but not brown. Add in wine and bring to boiling, stirring constantly; cook for 3 min till reduced to 1/4 c. mix. Gradually add in whipping cream, stirring constantly. Stir in veal strips, heat through but don't boil. Serve immediately with fried potato cakes or possibly mashed potatoes. Serves 4.
