%3C/p%3E%3Cp%3EI'm%20not%20sure%20how%20many%20of%20you%20agree%20with%20me%20but%20in%20my%20opinion%20it%20is%20difficult%20to%20cook%20meat%20than%20vegetables%20and%20whoever%20does%20it%20well%20means%20they%20are%20really%20good%20at%20cooking.%20Here's%20my%20explanation:%20different%20meats%20have%20to%20be%20cooked%20differently%20and%20knowing%20the%20right%20technique%20is%20really%20important%20(knowledge%20entirely%20based%20on%20watching%20waaaaaaay%20too%20many%20cooking%20reality%20shows..%20thank%20you).%20What%20I'm%20trying%20to%20say%20is%20cooking%20meat%20needs%20greater%20understanding%20of%20the%20ingredients.%20Veggies%20on%20the%20other%20hand%20need%20little%20thinking%20and%20even%20if%20you%20mess%20it%20up,%20oh%20well,%20it's%20still%20edible%20--%20think%20of%20mushy%20peas%20or%20green%20beans--you%20can%20still%20eat%20them.%20right??%3C/p%3E%3Cp%3ESo%20for%20this%20week's%20BM,%20I'm%20taking%203%20meat%20based%20dishes%20and%20making%20them%20meatless.%20I%20wanted%20to%20imitate%20as%20much%20of%20the%20original%20dishes%20in%20flavor%20as%20I%20can.%20For%20day%201,%20I%20made%20Kodi%20(chicken)%20kura%20without%20the%20kodi%20(chicken).%20I%20used%20Gardein%20chick'n%20scallopini%20or%20vegan%20chicken%20made%20with%20textured%20soy%20protein%20that%20looks%20almost%20like%20the%20real%20thing%20(to%20me%20at%20least).%20If%20anyone%20wants%20to%20know%20it%20is%20available%20in%20the%20freezer%20section%20of%20Whole%20Foods.%3C/p%3E%3Cp%3EI%20marinated%20the%20'chicken'%20in%20lime%20juice%20and%20spices%20for%20about%2015-20%20minutes%20and%20then%20proceeded%20with%20the%20curry.%20This%20made%20the%20pieces%20really%20moist%20and%20yumm!!%20My%20husband,%20who's%20been%20a%20vegetarian%20for%20almost%205%20years%20now,%20thought%20it%20tasted%20almost%20like%20kodi%20kura%20he%20remembers%20eating%20way%20back%20when.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EMarinate%20the%20Chicken:%20Combine%20all%20the%20ingredients%20listed%20under%20Marinade%20and%20add%20the%20cubed%20'chicken'.%20Mix%20well,%20cover%20and%20set%20aside%20for%20at%20least%2015%20minutes.%3C/p%3E%3Cp%3EMake%20Masala%20Powder:%20Dry%20roast%20the%20ingredients%20under%20Masala%20powder%20until%20aromatic%20and%20peanuts%20turn%20lightly%20brown.%20Cool%20a%20little%20and%20grind%20to%20a%20powder.%3C/p%3E%3Cp%3EMake%20Curry:%20Heat%202tbsp%20oil%20in%20a%20saute%20pan,%20add%20onions%20and%20cook%20until%20lightly%20browned%20around%20the%20edges.%20Add%20ginger+garlic%20paste%20and%20cook%20for%20another%20minute.%3C/p%3E%3Cp%3ENext%20add%20the%20tomato%20puree%20and%20the%20ground%20powder.%20Cover%20and%20cook%20until%20oil%20starts%20to%20separate,%20about%204-5%20minutes.%3C/p%3E%3Cp%3EAdd%20the%20marinated%20'chicken'%20along%20with%20the%20leftover%20marinade.%20Cover%20and%20cook%20until%20'chicken'%20is%20cooked%20through%20and%20tender,%20about%208-10%20minutes.%3C/p%3E%3Cp%3EAdd%20coconut%20milk%20and%20salt.%20Bring%20the%20mixture%20to%20a%20slow%20simmer%20and%20simmer%20for%203-5%20minutes.%3C/p%3E%3Cp%3EGarnish%20with%20chopped%20cilantro%20and%20serve%20with%20steamed%20rice.%3C/p%3E%3Cp%3ELets%20check%20out%20what%20my%20fellow%20marathoners%20have%20cooked%20today%20for%20BM%23%2031.%3C/p%3E%3Cp%3EPin%20It%20Now!%3C/p%3E){kind=link}
