This is an easy Vegan strawberry muffin recipe to make. The banana can act as a binder and provide moisture instead of eggs. So you don’t needs eggs or even egg-replacer!

If you’re out of coconut oil, I’m sure you could substitute canola oil.
Combined the coconut oil with the sweet banana, vanilla almond milk, and a dose of vanilla in the batter, these Vegan Strawberry Muffins are delicious and fragrant.

Vegan Strawberry Muffins
- ¾ cup all-purpose flour
- ¾ cup white whole wheat flour
- ¼ cup light brown sugar
- ½ cup white sugar
- ½ teaspoon salt
- 2 teaspoons baking powder
- ⅓ cup vanilla almond milk
- 1 large banana, mashed (about ½ cup)
- 1 teaspoon vanilla extract
- ⅓ cup coconut oil or canola oil
- 1 cup fresh strawberries
Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with muffin liners.
Combine flours, sugars, salt and baking powder. Add in milk , banana, vanilla, and oil and stir until just moistened. Fold in strawberries. Fill muffin cups ¾ full.
Bake for 20 to 25 minutes in the preheated oven, or until a toothpick comes out clean.
