Ingredientes
- For the rice:
- 4 cups water
- 2 Tablespoons Earth Balance
- 2 cups brown basmati rice
- For the tikka:
- 1 Tablespoon plus 1 Tablespoon garam masala
- 1 teaspoon plus 1 teaspoon sea salt
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1/2 teaspoon fresh ground pepper
- 1 pkg extra firm tofu, cubed
- 1 container (about 1 cup) So Delicious vanilla yogurt
- Extra virgin olive oil
- 1 onion, halved and sliced
- 4 cloves garlic
- 1 Tablespoon fresh grated ginger
- 1 serrano chile (small/med depending on heat preference) diced very fine
- 2 14 oz cans diced tomatoes, with juice
- 1 small can coconut milk
- Cilantro, chopped for garnish
- Green onion, chopped for garnish
