Cabbage and Onion Vada

Makes about 10-15 dumplings
Ingredients
- 1 cup urad dal (split black lentils)
- 2 tsp rice flour
- 1 cup cabbage, finely chopped
- 1/2 cup onions, finely chopped
- 1 or 2 green chillis , chopped
- 1 tsp chopped ginger
- 1/2 tsp asafoetida (hing)
- salt to taste
- Oil for deep-frying
Preparation:
Wash urad dal and soak in enough water for atleast 1 hour. Drain water. Grind together: soaked dal, green chilli and salt with about 1/2 cup of water. The consistency should be of that of a smooth paste, firm and not runny.
In a mixing bowl, add ground dal, rice flour, cabbage, onions, hing and ginger. Heat oil. Using a spoon, carefully drop little dumplings of batter. On medium-low heat, deep fry the fritters until golden brown. Drain on paper towels and repeat the same process with remaining batter as well. Serve with any chutney or dip.
