Vegetable Fried Rice with Egg Recipe
A delicious and simple fried rice with scrambled eggs. Great for packed lunches or for using leftover rice.
Ingredients:
- Eggs – 2
- Spring Onions – 2, sliced
- Onions – 1/4 cup, chopped
- Cabbage – 2 tblsp, grated (optional)
- Green Chillies – 1 to 2, finely chopped
- Green Peas – 2 tblsp
- Cucumber – 1/4 cup, chopped
- Capsicum – 1/2 cup, chopped
- Carrot – 1/2 cup, chopped
- Garlic – 1/4 tsp, minced
- Ginger – 1/4 tsp, grated
- Basmati Rice – 1 to 1 1/2 cups, cooked (or use leftover rice)
- Soy Sauce – 1 tsp
- Oil – 2 tsp
- Salt as per taste
Method:
1. Whisk the eggs and soy sauce together in a bowl.
2. Heat oil in a pan over medium flame.
3. Saute the vegetables for 2 minutes.
4. Add the ginger, rice and stir well.
5. Add salt and cook for a minute.
6. Make a small well in the center and pour the egg mixture.
7. Scramble until the egg is cooked and mix well until everything is mixed thoroughly.
8. Remove from flame.
9. Serve at once.
