  • 1 pound lowfat Ricotta cheese
  • 4 ounce. part-skim Mozzarella cheese
  • 2 sm. broccoli stalks, steamed for 5 min, liquid removed and minced (about 2 c.)
  • 1 c. sliced fresh mushrooms
  • 2 scallions, minced or possibly 2 tbsp. freshly cut chives
  • 1/4 c. mixed and minced fresh basil and oregano, or possibly 2 teaspoon dry of each
  • 1/4 c. minced fresh parsley
