- Put together flour, Parmesan cheese, parsley, salt and garlic pwdr. Stir in egg yolks, beer and extra virgin olive oil. Beat on low speed of electric mixer till smooth.In another bowl beat egg whites till stiff. Fold into beer batter. Pat vegetables with paper towel, dip in beer batter, fry in hot oil (375°F) for 2 to 5 min or possibly till golden. Drain on paper towel.
- Makes about 3 1/2 cups batter.
