%3C/p%3E%3Cp%3EVegetarian%20Chili%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3EIn%20a%20large,%20heavy%20pot,%20heat%20the%20oil%20over%20medium-high%20heat.%20Add%20the%20onions,%20bell%20peppers,%20garlic,%20and%20serrano%20peppers,%20and%20cook,%20stirring,%20until%20soft,%20about%203%20minutes.%20Add%20the%20zucchini,%20corn,%20and%20mushrooms,%20and%20cook,%20stirring,%20until%20soft%20and%20the%20vegetables%20give%20off%20their%20liquid%20and%20start%20to%20brown%20around%20the%20edges,%20about%206%20minutes.%20Add%20the%20chili%20powder,%20cumin,%20salt%20and%20cayenne,%20and%20cook,%20stirring,%20until%20fragrant,%20about%2030%20seconds.%20Add%20the%20tomatoes%20and%20stir%20well.%20Add%20the%20beans,%20tomato%20sauce,%20and%20vegetable%20stock,%20stir%20well,%20and%20bring%20to%20a%20boil.%20Reduce%20the%20heat%20to%20medium-low%20and%20simmer,%20stirring%20occasionally,%20for%20about%2020%20minutes.%3C/p%3E%3Cp%3ERemove%20from%20the%20heat%20and%20stir%20in%20the%20cilantro.%20Adjust%20the%20seasoning,%20to%20taste.%3C/p%3E%3Cp%3EFor%20the%20seranno%20peppers,%20I%20used%20what%20the%20tags%20says%20are%20%E2%80%9Csalsa%20chili%E2%80%9D%20peppers%20that%20we%20have,%20still%20producing%20fruits%20in%20November%20after%20having%20brought%20them%20in%20before%20the%20first%20frost%20last%20month!%3C/p%3E%3Cp%3EYou%E2%80%99ll%20see%20them%20in%20this%20picture:%3C/p%3E%3Cp%3EThe%20fresh%20veggies%20for%20the%20chili%3C/p%3E%3Cp%3EI%20also%20used%20only%201%20Tbsp%20chili%20powder%20(for%20those%20around%20Wakefield,%20the%20dark%20kind%20from%20Farmland)%20and%20two%20teaspoons%20of%20the%20cumin%20powder.%20%20BUT,%20I%20used%20a%20trick%20that%20I%20learned%20from%20Lorna%20Sass%20and%20toasted%20a%20tablespoon%20of%20cumin%20seeds%20in%20the%20oil%20for%20about%20a%20minute%20before%20adding%20the%20first%20ingredients%20at%20the%20beginning%20of%20the%20process.%20%20I%20also%20added%20a%20heaping%20%20tablespoon%20of%20%20cocoa%20powder%20when%20the%20other%20powered%20spices%20were%20added.%3C/p%3E%3Cp%3EI%20made%20two%20batches.%20%20One%20with%20one%2015%20oz%20can%20of%20black%20beans%20and%20one%2015%20oz%20can%20of%20red%20beans%20(like%20pinto)%20and%20the%20other%20with%20same%20sized%20cans%20%E2%80%93%20one%20each%20pinto%20and%20garbanzo.%20%20I%20think%20I%20like%20the%20second%20combination%20better,%20but%20that%20is%20a%20matter%20of%20taste.%20%20I%20used%20three%20chili%20peppers%20in%20the%20first%20batch%20but%20only%20two%20in%20the%20second.%20%20I%20like%20my%20chili%20pretty%20spicy,%20but%20these%20batches%20are%20for%20the%20public%20so%20I%20didn%E2%80%99t%20want%20to%20blow%20anyone%20away!%20%20And,%20frankly,%20this%20chili%20is%20so%20flavorful,%20it%20doesn%E2%80%99t%20need%20to%20blow%20your%20socks%20off.%3C/p%3E%3Cp%3EI%20will%20probably%20add%20some%20dried%20oregano%20to%20the%20final%20version,%20also.%3C/p%3E%3Cp%3EI%E2%80%99ll%20end%20with%20pictures%20of%20the%20chili%20cooking%20process%20%E2%80%93%20great%20colors!%3C/p%3E%3Cp%3EToasting%20the%20seeds%20-%20the%20scent%20is%20fabulous!%3C/p%3E%3Cp%3EFirst%20batch%20of%20veggies:%20onion,%20red%20bell%20pepper,%20garlic,%20and%20chilis%3C/p%3E%3Cp%3EMore%20veggies%20-%20this%20is%20after%20the%20liquid%20has%20sweated%20out%3C/p%3E%3Cp%3Efinal%20spices%20added%20and%20ready%20to%20simmer%20and%20thicken!%3C/p%3E%3Cp%3EAnyway%20%E2%80%93%20that%E2%80%99s%20it.%20%20I%20still%20have%20three%20or%20four%20more%20recipes%20from%20the%20past%20month%20to%20post%E2%80%A6%20One%20is%20for%20a%20cauliflower%20soup%20to%20die%20for!%20%20Soon,%20soon%E2%80%A6.%3C/p%3E){kind=link}
