Receta Veggie Frittata
I love a good frittata. More often than not, however, there is a lot more egg than vegetables, or other ingredients for that matter. In the spirit of making a healthier version, I offer the following 6 serving veggie frittata.

- Spray a 10 or 12 inch non-stick skillet with cooking spray and place over medium heat.
- Add onion, cook until soft-about 3 minutes. Add vegetables and raise heat to medium-high. Cook, and stir occasionally until vegetables are tender-about 10 minutes.
- In a bowl, beat eggs, season with salt & pepper, and add cheese.
- Turn stove to low-medium and pour eggs into skillet and swirl to make sure they are distributed evenly.
- Cook, undisturbed, until eggs are set-about 10 minutes.
- Place under broiler for a minute or two to brown slightly.
- Remove from pan & cut into 6 wedges.
