Ridge Guard Peels
As is said in many health journals and by the experts in food and nutrition, maximum health benefit is just under the peels of any vegetable or fruit. So don’t discard these humble yet goldmine of nutrients when you plan to cook Ridge guard. The recipe here is what my mom used to make often when we were kids. Disliked and avoided at most of the times during childhood, I now love to make the same, every time that I get my hands on a tender Ridge gourd.
Ingredients;
- 1 cup peels of very tender Ridge gourd
- 1/2 cup of Chickpea flour or Besan
- 2 tsp of Curd or Yogurt
- 1 tsp of chilly powder
- 1 tsp of coriander powder
- 1/2 tsp of chaat masala (optional)
- 1/4 tsp of Turmeric powder
- Salt as desired
- 1 tsp of Mustard seeds
- 5-6 tsp of Oil
A [pinch of Asafoetida
Method: Peel the tender skin of Ridge gourd and dice it finely. Take the diced peels in a vessel and mix all the dry powders and 2 tsp. of Curds in it. Mix it thoroughly.
Heat oil in a skillet and crackle the mustard seeds. Add the peels mixed with the powders. Fry it for 5-6 minutes or more if you like crispy recipe.
Serve hot with chapattis or as an accompaniment to rice.
Its a real nutritious and tasty recipe made in a jiffy. Try it and you will start loving the peels of every vegetable.
