- 1 medium zucchini, chopped into 1/2 inch pieces
- 1 yellow squash, chopped into 1/2 inch pieces
- About 2 Tablespoons fresh thyme, chopped
- About 1 1/2 teaspoons crushed red pepper
- Salt and pepper
- 1 orange bell pepper, chopped into about 1/2 inch pieces
- 3 large tomatoes, seeded and chopped
- 1/2 cup fresh basil, julienned
- 1/4 cup fresh flat leaf parsley, chopped
- 1 french baguette, cut into 4 or 6 pieces, depending on how large you want your sandwiches
