Keeping busy trying new recipe ideas while waiting for our heat to return. No heat, due to a defective new furnace installed this summer, not as a result of Hurricane Sandy. However, due to Sandy and all of the local devastation, it's been impossible to get anyone out here to fix it. We're staying warm with a space heater and consider ourselves very lucky we have no serious damage. Meanwhile, my favorite comfort food in times of stress - CHIA PUDDING! And while chia pudding is nothing new, using walnuts and almonds, instead of cashews was a welcome change, with delicious results.

Chia Soaking

I apologize I didn't write the recipe down when making this, but will try to list the ingredients used.

I started out with a chia gel. You can skip the soaking, but it's not as nutritious. Just mix the chia in the blender with water. I had prepared chia gel and needed to use it. The measurements listed below are what I think I used...sorry! Honestly, just mix it all up and taste it...adjust sweetness and refrigerate. You'll love it!

Chia Gel

Directions:

You can skip the chia gel and just mix chia and water in blender, but it's always better to soak your chia. I used about 3 Tbsp chia and 3/4 cup water, letting it sit out all night.

Blend soaked chia and use as is, or refrigerate until ready to use. This can be added to smoothies.

In the blender, mix 1 cup nuts (mixed almonds and walnuts) that were previously soaked and dehydrated with chia gel.

Add **cacao powder and a pinch of sea salt.

Add cacao nibs.

Add 2 drops *Medicine Flower Morello Cherry extract and 2 drops Medicine Flower Dark Chocolate extract

Add 3-4 Tablespoon grade B maple syrup or your favorite liquid sweetener. Blend until creamy, adding water or almond milk to thin as needed.

Pour into goblets and refrigerate several hours. Garnish with chopped walnuts and/or cacao nibs.
