Warm Corn Dip
I took this to my niece’s 3rd Birthday Party a while back and I think I ate 1/2 of it myself! (And somebody ate the other half-and you know who you are…just saying) I’ve had this recipe for YEARS and I just love it! I turn down the heat a little, but you can certainly make it very hot if you want. Everyone who has ever had this loves it!
Warm Corn Dip
INGREDIENTS:
- 2 tablespoons butter
- 1/4 cup onion-diced small
- 2 tablespoons minced jalapenos
- 1 1/2 tablespoons minced garlic
- 3 cups frozen corn kernels
- 4 ounces monterey jack
- 3/4 cup sour cream-light
- 3/4 cup mayonaise-light
- 1 cup poblanos-chopped
- 1/2 cup red bell pepper-chopped
- 1/4 cup green onions (green parts only)
- 4 ounces cheddar cheese-grated
- 2 1/2 tablespoons sweet paprika
- 2 tablespoons salt
- 2 tablespoons garlic powder
- 1 tablespoon black pepper
- 1 tablespoon onion powder
- 1 tablespoon cayenne
- 1 tablespoon dried oregano
- 1 tablespoon dried thyme
DIRECTIONS:
Preheat oven to 375 degrees. Over medium high heat, melt butter. Add onions and sweat for 3-4 minutes. Add jalapenos and garlic and sweat for 2 minutes. Add corn and sweat for 5-6 minutes. Remove this mixture and pour it into a mixing bowl. Add the remaining ingredients and mix well. Bake for 20-25 minutes or until it bubbles.
**This freezes well, so make an extra-large batch so you always have some on hand for unexpected guests!
