Receta Warm Potato Salad
This is a great salad to serve for lunch or with Fried Chicken for dinner. It's easy to prepare, has few ingredients and tastes delicious. It always reminds me of dinning alfresco on a summers' evening. It's just as good heated up the next day too.

- Place potatoes in a pot of salted water and bring to the boil.
- Turn down the heat to gently simmer them until just done.
- While the potatoes are cooking, fry the bacon in a little oil until crisp, remove the bacon to a paper towel, saving the oil for the dressing.
- Combine the dressing in a small bowl and set aside.
- When potatoes are done, drain, cut in half and place on serving platter.
- Drizzle the dressing over the potatoes.
- Toss the bacon and spring onions on top and season with freshly ground black pepper.
