This I guess is one of the simplest recipes I ever encountered basically you just need to place everything in a pot then let it boil and cook, it’s that simple you don’t even need a recipe just a list on what you need to put on that pot. This is what I like with simple soups like this, its stress free no fuss cooking. It might look simple but it has some good flavours on it coming from the pork bones helped by some red dates, dried shrimps and Chinese almonds which gives that unique and authentic flavours similar to other clear broth Chinese soups or congee, the combination of this ingredients gives that herbal feeling that gives that good comfort perfect in any cold winter night like what we currently have now.Watercress with Pork Rib Soup  Save PrintPrep time Cook time Total time  Serves: 5Ingredients1 kg pork ribs, cut into bite size pieces1 pack watercress, trimmed1 large white onion, roughly chopped8 Chinese red dates2 tbsp dried shrimps1 tbsp Chinese almonds1 ½ litre watersaltfish sauceground white pepperInstructionsIn a pot place pork ribs, onion, Chinese red dates, dried shrimps, Chinese almonds, water and salt. Bring to a boil and remove any scum that rises on top.
