Receta Watermelon and Peach Salsa #FoodNetwork
It’s roundup day for the Food Network’s blog, FN Dish, and the theme is watermelon. I confess I wasn’t a lover of watermelon until the last couple of years. When I was kid I could never understand what the fuss was all about. It was messy, full of huge black seeds, and not sweet enough for me.
Times change, so do our taste buds. Now we have seedless watermelons at our fingertips, and they’re plenty sweet for me now. All summer long, I almost always have watermelon in the refrigerator for salads, snacking, and this salsa.
Salsas are great condiments to have in your back pocket for summertime dishes. I eat them on their own, but are great with goat cheese and crackers, served over grilled trout (yes, I eat some fish), and tonight, my husband had this salsa on his pork chops. If you like strawberries, here’s another great fruity salsa that’s great with cheese and crackers.
Salsas are easy to make, can often be made ahead, and add a great twist to a familiar dish. This one combines the sweetness of watermelon and peaches with the crunch of cucumbers. A little (optional) Serrano pepper is thrown in and tossed with cilantro, lime juice, and a new ingredient for me, Peach White Balsamic Vinegar from the folks at We Olive. If you live in California, you may be lucky enough to have a We Olive store near you (here’s their store locator), but either way – you can order their fantastic olive oils and vinegars online. Their lemon and garlic olive oils are some of the best I’ve ever tried, and I’m in love with their Peach White Balsamic Vinegar. It’s not too tart or heavy, and has a fresh light flavor of peaches. I’m using it in so many dishes right now.

Watermelon and Peach Salsa
Prep time: 30 mins
Total time: 30 mins
4 cups small diced seedless watermelons (1/2 of a personal sized watermelon) 2 cups white peaches, pitted, peeled and diced 2 cups chopped cucumber 1 Tbsp minced Serrano pepper (optional) ½ cup coarsely chopped cilantro Juice of 1 lime 1 Tbsp Peach White Balsamic Vinegar (see post for information) ½ tsp kosher salt Black pepper
Combine all ingredients EXCEPT the black pepper into a large bowl, and chill for at least one hour to meld flavors. Toss a couple of times during the chill phase. Serve with a few twists of black pepper. 3.3.3077
