Receta Watermelon, Feta, and Blueberry Salad
It is that time of the year again for patriotic themed foods and this Watermelon, Feta, and Blueberry Salad (red, white, and blue) was a fun dish to put together. I had to use some creative license here to create my “flag”. I also made a bowl out of one half of the watermelon rind. I was quite pleased with the results and both my boys thought they looked great too.
Watermelon and feta salads have been around for sometime although I have never personally tasted it. Since there are currently lots of “individual” sized watermelons on sale, it is time to give it a try. With 4th of July just round the corner, I added some blueberries for a patriotic touch. The salad turned out to be quite tasty. I was pleasantly surprised at the sweet and salty combination.
The idea for this recipe was inspired by a similar one found at epicurious.com and various pictures seen on Pinterest. The simple vinaigrette is from my earlier Spring Greens, Strawberry, and Feta Salad. This one uses lemon juice instead of balsamic vinegar so that the dressing remains clear. The watermelon and blueberries can be left to chill in the refrigerator before being served. Only add the dressing, feta cheese, and mint leaves just before serving.
Watermelon, Feta and Blueberry Salad
Ingredients
- 1 small seedless watermelon, rind removed and cubed
- 1 cup (150g) blueberries, rinsed and thoroughly drained
- ½ cup (2 oz/56g) feta cheese crumbles
- Mint leaves (optional)
- Vinaigrette
- 2 tbsp lemon juice
- 2 tbsp extra virgin olive oil
- 1 tsp sugar
- ¼ tsp salt
Instructions
Place watermelon and blueberries in a large bowl.
Combine all dressing ingredients in an empty bottle. Put the lid on and give it a good shake.
Drizzle vinaigrette over fruits.
Sprinkle feta cheese and mint leaves (if using) on the top.
Serve immediately.
