Watermelon Rose Water Margarita: Drink up the freshness!
We're not big tequila drinkers. So, after making a couple of margarita fruit salads, what do we do with the big bottle of tequila left over? Well...EXPERIMENT! Yes, I said we're not big tequila drinkers, but a couple of margaritas with fresh watermelon and a couple of splashes of rose water won't hurt us, right?
It was simple to make: watermelon, lemon juice, lime juice, rose water, and tequila. All blended up in our lovely Vitamix with some ice. Frothy and sweet. Light and refreshing. No need for a mix!
The color was so pretty. I had to break out some margarita glasses my cousin gave us as a wedding gift. And what made it even prettier was the organic sugar crystals around the lime-juiced rim.
Now...what do I do with the rest of this tequila? Can you use it in a baked dessert? Let us know in the comments!

Watermelon Rose Water Margaritas

Serves: 4
Ingredients:
- 4 cups of cut watermelon
- Juice of 1 lemon
- Juice of 1 lime
- 1/2 c. cold water
- 2-3 c. ice
- 2 Tbsp. rose water
- 2 Tbsp. tequila
- Garnish:
- Lime wedges
- Salt and/or sugar for rolling (optional)
Directions:
Prepare 4 margarita glasses by running a lime wedge around the edge of each glass. Roll glasses in sale or sugar. Set aside.
In a blender, mix together watermelon, lemon and lime juices and 1/2 c. of water until smooth
Run mixture through sieve to remove any fruit bits or seeds
Add mixture back to blender with ice, rose water and tequila. Blend on high for about 1 minute
Pour into prepared margarita glasses and serve

Notes:
Want a non-alcoholic (virgin) version of this drink? Just follow the recipe as listed, but leave out the tequila. Add a little more lime juice before pouring into glasses. Top off glasses with a bit of seltzer for a light spritzy touch.
