%20and%20me%20in%20showcasing%20recipes%20from%20around%20the%20food%20blog%20world.%20Please%20see%20the%20text%20at%20the%20end%20of%20this%20post%20to%20learn%20more%20about%20the%20Weekend%20Blog%20Showcase%20and%20how%20you%20can%20participate,%20too!%3C/p%3E%3Cp%3EThe%20recipe%20I%20decided%20on%20for%20this%20weekend%20comes%20from%20DandySugar.%20%20Lisa's%20photography%20is%20stunning%20(I'm%20always%20so%20in%20awe%20of%20great%20photography%20-%20check%20out%20her%20photos%20for%20her%20Cherry%20Peach%20Almond%20Crisps!),%20as%20are%20her%20wonderful%20recipes.%20%20Lisa%20says%20she%20was%20introduced%20to%20cooking%20via%20a%20hand-me-down%20aqua-colored%20Easy%20Bake%20Oven...%20I%20had%20that%20same%20oven,%20only%20mine%20was%20brand%20new%20(showing%20my%20age!),%20and%20experienced%20the%20same%20%20spark.%20%20Ah%20-%20a%20kindred%20spirit!%3C/p%3E%3Cp%3EI've%20had%20Lisa's%20recipe%20for%20her%20Rosemary%20Tomato%20Tarts%20bookmarked%20for%20quite%20some%20time%20now,%20and%20since%20I%20had%20everything%20on%20hand,%20this%20was%20my%20chosen%20recipe%20for%20this%20week's%20Showcase.%20%20And%20am%20I%20ever%20glad%20I%20finally%20made%20these.%20%20So%20easy,%20so%20utterly%20delicious.%3C/p%3E%3Cp%3EI%20ended%20up%20making%20four%204-inch%20tarts%20using%20tart%20pans%20with%20removable%20bottoms.%20%20After%20realizing%20I%20hadn't%20eaten%20all%20day,%20I%20easily%20downed%20two%20of%20these%20babies%20for%20dinner!%20%20I%20will%20be%20making%20these%20again%20and%20again.%20%20The%20filling%20was%20delicious,%20the%20crust%20extremely%20flaky.%20%20Thank%20you,%20Lisa,%20for%20a%20wonderful%20recipe%20I%20will%20happily%20add%20to%20my%20own%20repertoire!!%3C/p%3E%3Cp%3EIn%20a%20food%20processor,%20combine%20flour,%20salt,%20sugar%20and%20rosemary.%20Pulse%201%20-%202%20times%20until%20just%20incorporated.%20Add%20the%20butter%20cubes%20and%20pulse%20until%20mixture%20resembles%20course%20meal%20about%20the%20size%20of%20a%20pea.%20Add%20water%20a%20tablespoon%20at%20a%20time%20and%20pulse%20only%20until%20mixture%20just%20comes%20together.%20Test%20by%20squeezing%20a%20pinch%20of%20dough.%20If%20it%20sticks%20together%20it%E2%80%99s%20done.%3C/p%3E%3Cp%3EPlace%20dough%20on%20a%20lightly%20floured%20surface.%20Form%20into%20a%20disk%20shapes,%20flour%20all%20sides,%20and%20wrap%20well%20with%20plastic.%20(If%20making%20small%20tarts,%20separate%20dough%20into%20thirds%20or%20fourths%20and%20wrap%20each%20individually.)%20Refrigerate%20for%20at%20least%201%20hour%20up%20to%2024%20hours.%20When%20you%20are%20ready%20to%20roll%20out,%20make%20sure%20to%20let%20dough%20come%20to%20room%20temperature%20for%20about%2010-15%20minutes%20before%20rolling%20out.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20when%20you%20are%20ready%20to%20make%20your%20tarts.%3C/p%3E%3Cp%3ERosemary%20Tomato%20Filling%3C/p%3E%3Cp%3E3%20-%204%20tomatoes%20(I%20used%20one%20large%20beefsteak%20tomato)%3C/p%3E%3Cp%3E2%20tablespoon%20olive%20oil%3C/p%3E%3Cp%3E1%20onion,%20sliced%20into%20thin%20strips%3C/p%3E%3Cp%3E2%20cloves%20of%20garlic,%20minced%3C/p%3E%3Cp%3E1%20tablespoon%20fresh%20rosemary,%20chopped%3C/p%3E%3Cp%3Egoat%20cheese%3C/p%3E%3Cp%3Ejuice%20of%201/2%20lemon%3C/p%3E%3Cp%3EHeat%20olive%20oil%20in%20a%20skillet.%20Saute%20onions%20for%20about%205%20minutes%20until%20they%20are%20translucent.%20Add%20the%20garlic%20and%20stir%20until%20fragrant.%20Add%20the%20rosemary%20and%20stir.%20Add%20the%20lemon%20juice%20and%20stir.%20Remove%20from%20heat.%3C/p%3E%3Cp%3ERoll%20out%20your%20dough%20into%20rounds%20and%20place%20each%20round%20into%20a%20tart%20shell.%20Carefully%20press%20dough%20into%20shell%20and%20cut%20off%20excess%20to%20use%20for%20another%20tart%20if%20necessary.%20Poke%20holes%20in%20the%20bottom%20of%20shells%20and%20evenly%20distribute%20the%20onion%20mixture%20in%20each%20shell,%20following%20with%20a%20sprinkling%20of%20goat%20cheese.%20Arrange%20tomato%20slices%20on%20top.%20Add%20a%20very%20light%20drizzle%20of%20olive%20oil%20and%20top%20with%20chopped%20fresh%20rosemary.%3C/p%3E%3Cp%3EBake%20for%2025-30%20minutes%20depending%20on%20your%20oven.%20Let%20cool%20for%2010%20minutes.%20%20(I%20sprinkled%20a%20little%20coarse%20sea%20salt%20on%20the%20tarts%20before%20serving%20-%20perfect!)%3C/p%3E){kind=link}
