%20was%20scallops%20with%20some%20sort%20of%20grapefruit%20component.%20so%20i%20did%20a%20few%20web%20searches%20to%20see%20what%20i%20could%20find.%20the%20most%20appealing%20sounding%20method%20of%20preparation%20was%20from%20eating%20well.%20since%20little%20goes%20better%20with%20grapefruit%20than%20avocado%20(just%20try%20to%20challenge%20me%20on%20this%20one),%20i%20decide%20to%20plop%20these%20suckers%20onto%20a%20simple%20salad.%20voila.%20actually,%20i%20admit%20this%20was%20the%20very%20first%20time%20i%20have%20made%20myself%20scallops%20and%20it%20was%20brilliant.%20i%20was%20impressed%20by%20my%20deliciously%20fancy%20(but%20easy!)%20dish.%3C/p%3E%3Cp%3Eseared%20scallops%20with%20grapefruit%20sauce%3C/p%3E%3Cp%3Eadapted%20from%20eating%20well%3C/p%3E%3Cp%3Esear%20the%20scallops:%20first%20make%20sure%20they%20are%20dry%20by%20patting%20with%20a%20paper%20towel%20then%20season%20with%20salt%20and%20pepper.%20heat%20a%20couple%20of%20tablespoons%20of%20oil%20in%20a%20pan%20over%20medium%20high%20heat%20and%20when%20the%20oil%20is%20hot%20(don't%20jump%20ahead%20here!)%20add%20the%20scallops%20to%20the%20pan.%20brown%20on%20each%20side;%20this%20only%20takes%20a%20few%20minutes.%20remove%20from%20the%20pan%20and%20set%20aside.%3C/p%3E%3Cp%3Eadd%20another%20tablespoon%20of%20oil%20to%20the%20pan,%20then%20the%20shallots.%20cook%20the%20shallots%20until%20soft.%3C/p%3E%3Cp%3Edeglaze%20the%20pan:%20add%20chicken%20stock,%20wine,%20citrus%20juice%20and%20zest%20to%20the%20pan,%20and%20stir%20with%20a%20wooden%20spoon,%20scraping%20the%20bottom%20to%20release%20the%20scallop%20bits.%20allow%20this%20mixture%20to%20come%20to%20a%20boil%20and%20then%20reduce%20for%20a%20few%20minutes.%3C/p%3E%3Cp%3Eadd%20the%20mint%20and%20honey%20to%20the%20pan,%20stir,%20and%20add%20the%20scallops%20for%20a%20minute%20to%20warm.%3C/p%3E%3Cp%3Eserve%20scallops%20on%20a%20bed%20of%20lettuce%20with%20avocado%20and%20grapefruit%20slices.%3C/p%3E%3Cp%3Eserves%202%3C/p%3E){kind=link}
