Receta Weeknight Flautas {Quick Meals}
As a mom to four kiddos, I don't always have the time that I would like to make dinner. If it were up to me, I would be preparing and serving complex dishes that have a lot of ingredients - but that's not the case, there just isn't always time for that! I need easy, real homemade meals that can be made in 30 minutes or less. These Weeknight Flautas are just that - 4 ingredients needed and they are on the table before you know it. My kinda meal! And don't let the number of ingredients in this recipe fool you about the flavor that's packed inside - with the help of Campbell's new Soups for Easy Cooking, these flautas have the flavors of tomato, peppers, onion, garlic, lime juice and cilantro.
These Weeknight Flautas were an absolute hit at our house - from the 2-year olds to the adults! My kids' favorite dish to request for take-out is rolled taquitos {with guacamole and cheese} from our favorite Mexican restaurant. These flautas easily took the take-out taquito's place. Easily. Since these aren't fried {they're baked}, this is a healthier option. Plus, it's less expensive and takes about the same amount of time as running up to the restaurant. These Weeknight Flautas have quickly made their way into our weeknight dinner rotation!
So, is the best part about this recipe the delicious flavors? Or the short amount of time it takes to cook? It's a toss-up because both aspects are making this a winner-winner-chicken-dinner! I used Mexican Style Tomato Campbell's Soups for Easy Cooking, which was a perfect flavor pairing with the condiments of guacamole, sour cream and salsa. I bet this Weeknight Flautas recipe would be awesome with the other Soups for Easy Cooking varieties as well, maybe just switch up the condiments for better flavor pairings.

Weeknight Flautas
yields approximately 12 flautas
Ingredients
- 2 cups shredded chicken
- 1 cup colby jack cheese, shredded
- 1 cup Campbell’s Mexican Style Tomato Soups for Easy Cooking
- 12 soft taco flour tortillas
Directions
1. Heat oven to 425
2. Mix together shredded chicken, cheese and Mexican Style Tomato Soups for Easy Cooking. Divide mixture over 12 flour tortillas. Wrap up as tightly as possible and place on baking sheet, seam side down, and press a little down to ensure seam side stays down.
3. Bake for 7 minutes, then turn on broiler for a couple minutes so that flautas turn golden-brown at ends.
4. Serve with sour cream, salsa and guacamole. Enjoy!
