West Coast Shrimp Stir Fry

Ingredientes

  • 1 1/2 pound peeled, deveined raw shrimp
  • 2 tbsp. vegetable oil
  • 1 lg. onion, sliced and separated into rings
  • 1 1/2 lg. green peppers, cut into strips
  • 1 c. diagonally sliced celery
  • 1 clove garlic
  • 1 1/4 c. chicken broth, divided
  • 1/2 teaspoon grnd black pepper
  • 2 tbsp. cornstarch
  • 3 tbsp. soy sauce
  • 2 lg. tomatoes, minced
  • 4 c. warm cooked rice

Direcciones

  1. Cook shrimp in oil wok or possibly large skillet for 2 min. Add in onion, peppers, celery, garlic, 1/2 c. broth and pepper. Cover; steam 2 min. Dissolve corn starch in remaining 3/4 c. broth and soy sauce; stir into shrimp. Add in tomatoes; cook till sauce is clear and thickened. Serve over fluffy rice.
