Western Omelet Pie

Ingredientes

  • 3 tbsp. oil
  • 1 c. onion minced
  • 3 1/2 c. frzn hash brown potatoes
  • 1 1/2 teaspoon salt
  • 2 tbsp. butter
  • 1 green pepper, minced
  • 2 tbsp. minced parsley
  • 1 1/4 c. lowfat milk
  • 4 Large eggs, beaten
  • 1 c. grated Swiss cheese

Direcciones

  1. In skillet heat oil and add in 1/4 c. onion, sauteing till soft. Add in frzn hash browns and 1 tsp. salt. Cook over medium heat till potatoes are soft. Pat into bottom and sides of 9-inch pie plate, forming crust. Bake 20 min.
  2. In the same skillet, heat butter; add in pepper, remaining onions, and parsley; saute/fry. In medium bowl combine Large eggs, lowfat milk, and 1/2 tsp. salt. Sprinkle crust with peppers, onions, and cheese. Pour in egg mix and bake 30 min till set.
